Guilt-Free Ice Cream: Chocolate Chip and Mint Nice Cream

Ice cream without the guilt. Sounds too good to be true, right? Well, all things in moderation, but this is actually ice cream that is good for you! There’s no dairy, it’s vegan-friendly, plus it helps contribute to your “5 vegetables and fruits” a day quota. If you haven’t yet heard of “nice cream” (no dairy, vegan-friendly ice cream), you’re in for a treat!

Chocolate Chip and Mint Nice Cream

(Makes 2 portions)
3 peeled and halved, pre-frozen bananas
1 bunch or 1/4 cup fresh mint
50g dark chocolate
1 tbsp maple syrup
1 tbsp raw cacao nibs 

Pre-freeze your bananas, at least overnight. Once you’ve tried nice cream the first time, you’ll understand why I now keep a stash of frozen bananas in my freezer. 

Roughly chop your mint and chocolate. Add all the ingredients to a blender. Blend! Use a pusher/tamper/push tool to safely push down your bananas towards the blade. Blend just until smooth, as you don’t want all that delicious nice cream to melt! 

Serve in bowls, sprinkle over some raw cacao nibs and perhaps some fresh mint, grab a spoon and enjoy! 

For a rich, chocolate version, use 100g dark chocolate and leave out the fresh mint.
