How to Roast Pumpkin Seeds
Never throw away your pumpkin seeds! They're so easy to roast and so tasty, far better than the store-bought kind.
Roasting Pumpkin Seeds
1 pumpkin or butternut squash
1 tsp extra virgin olive oil
1 tsp salt
If you have a recipe that uses pumpkin, don't discard the seeds! De-seed the pumpkin, and wash the seeds thoroughly. Leave them to dry overnight on some kitchen towel. Heat up a pan on a middle-to-high heat, add your salt and olive oil and give it a good stir. You can also dry-roast your pumpkin seeds, just omit the olive oil and salt. Stir frequently until the seeds are golden and crunchy, which takes about 15-20 minutes.
